Almost 25 years later, Global knives are still on the cutting edge
If you've spent anytime at all on High Tech's website or in the store, you know we're big fans of Global knives.

The concept behind the development of the GLOBAL series was to bring together Italian design aesthetics, German durability, and Japanese precision.

Industrial designer Komin Yamada was retained by Yoshikin to design a new knife based on that concept, which gave birth to GLOBAL knife in 1983.

Since then, Global knives have won several design of awards and the endorsement of many celebrity chefs including Susur Lee, Rachel Roy and several of the Iron Chefs.

Each Global knife is heat-treated at about 1000 degrees centigrade during the manufacturing process.

After that, the knife undergoes the rapid cooling at minus 80 degrees centigrade. This "sub-zero treatment" increases the hardness of the blade, and
the enhanced uniformity of the stainless steel's crystalline structure leads to the improved cutting qualities.

After this "sub-zero treatment," the knife is once again passed to another heat treatment that takes about four hours. This tempering process makes the knife stronger and tenacious.

But it's the convex cross-sectional shape that delivers incredible sharpness and cutting power.

From the ridge to the point of the blade, the knife-edge is not a straight line, but rather forms a gradual curve.

This makes the edge more effective for cutting so foods separate from the blade easily.

Keep in mind that not even the high grade of stainless steel used in Global knives is not completely rustproof, though Globals do not rust easily.

To maximize your use and enjoyment of Global knives, always wash them by hand and store in a clean, dry place.
